Where It All Began
The Et Voilà bakery results from over a 15-year-old reflection and process. It meets two different but complementary needs:
A warm place to share a moment with friends or family over sweets that taste like our childhood. A place where our community can gather and enjoy taking a break in the rush of live.
To enable future profits to support the non-profit Serving Alongside Ministry (SAM), which offers a comprehensive range of services in counseling, including prevention, pastoral care, intensive couples therapy, spiritual and emotional healing, restoration, and spiritual mentorship and ministry team building. SAM comes alongside Churches, Christian Organizations, Ministry Leaders, Pastors, and Missionaries because the family unit is an essential part of every culture. If it is broken, a chain reaction starts destroying the families, the children, and society as a whole.
It is a family story! Rachel and Ruth's mother was a cordon-bleu chef. With very little money, she turned even the smallest meal into an extraordinary experience. In this way, she passed on to them a taste for good things and simplicity.
Although Eric does not have a sweet tooth, he shares this aspect of French culture of convivial moments around a coffee, tea, chocolate, a viennoiserie, a madeleine, a cake, or a good chocolate-olive marshmallow.

After a career in Econometrics forecasting, Ruth went back to World Champion of the dessert trades, MOF (Best Pastry Chef of France) Olivier Bajard’s pastry school to learn the art of French pastries, one of the most prestigious training centers in France, where she studied under some of the best professionals in the world.
She completed her training by working with Pastry World Champion and MOF Bruno Montcoudiol.
Then, she learned the art of sourdough bread by working in an organic exclusively sourdough bakery, supplying all the organic supermarkets and farmer markets of the Pyrénées Orientales départment in France.
She suffers from numerous allergies and food sensitivity and thus has learned the Respectus Panis method to create tasty-good-for-your-health bread and viennoiseries she can eat.
Rachel and Eric are in charge of a “PASTORAL CARE” program in France dedicated to people with professional training in helping relationships and want to deepen their knowledge by integrating a holistic biblical approach in their work.
With Eric, Rachel accompanies and helps couples, singles, and engaged couples in full-time ministry to help them regain good spiritual and emotional health for themselves and their families.
After a degree in diplomacy, Eric became a pastor, missionary, therapist, and speaker committed to the servants of God. Through his professional experience and personal trials, he is aware of the particular difficulties and crises experienced by Christian leaders, whether couples or singles, in their duties.
From this realization came the call to offer services that would enable them to receive professional and spiritual help, in complete confidentiality, from people who could understand and help them effectively. In response to this call, he and his wife Rachel founded the ministry "Service Aux Ministères" (SAM), which offers counselling to Christian leaders worldwide.
Eric is the father of 5 grown-up sons and a happy grandfather.
